Here's a couple Tex-Mex recipes! First is Guacamole. You need 4 avacadoes, 1/2 cup of salsa, 1/4 cup of sour cream and 1 teaspoon of salt.
First, split the avacadoes and remove the seeds. Mash the avacadoes with a fork. Add sour cream, salsa and salt. Mix together. (Serve with tortilla chips) How easy does that sound?

The second recipe is Con Queso Chili. You need 1 pound of Velveeta cheese, melted, 2 15 ounce cans of chili, with no beans. (I recommend Stagg chili. Stagg has beef, chicken and vegetable chili.), 1 4 ounce can of green chilies, and 1 medium sized onion, finely chopped.
Mix all ingredients and pour into a 9 x 13 inch baking dish. Bake at 350 for 35 minutes. (Serve with tortilla chips. Very good!)

This is the recipe that prompted Jody informing me that I have to post the ingredients on my site when I mention cooking. So here it is!

Chili Pepper Chicken (or as I like to call it Spicy Pepper Chicken)
5 boneless skinless chicken breasts
1 envelope, hot & spicy recipe Shake 'N Bake
1 4 ounce can chopped green chilies
Chunky salsa

I couldn't find chilies so I use jalepeno peppers. I also used the Spicy BBQ Chicken Wing recipe Shake 'N Bake, because I wanted it extra spicy!

First, dredge the chicken in coating mixture and place in a baking dish. (I applied some butter to the bottom of the pan to prevent sticking.) Bake at 375 for 25 minutes. Remove from oven and spread the chilies over the chicken breasts and return to the oven for another 5 minutes. Serve with salsa.
