These are just a couple of appetizers, great for taking to a Pot-luck dinner. First, this is the recipe for BACON ROLL-UPS. You need 2/3 cup sour cream, 1/2 teaspoon celery salt, 1/2 pound bacon, cooked and crumbled and 1 package crescent rolls, separated.
Combine sour cream, celery salt and bacon. Spread over rolls and fold over. Bake at 375 for 10 to 15 minutes.

This one is a nice substitute for the meatballs that always go to a Pot-luck: GREAT BALLS OF FIRE. You need just 1 pound lean hot sausage, 1 can chopped tomatoes and green chilies and 1 pound Velveeta cheese.
Brown sausage in a large skillet. Drain off fat. Add tomatoes and green chilies and mix. Cut cheese into chunks and add to sausage mixture. Cook on low heat until cheese is melted. Serve hot in chafing dish with large chips. You may need a warning label for these!

I don't know if you are aware, but I am a big chicken fan. So here's another chicken recipe! BACON-WRAPPED CHICKEN. You need 6 boneless, skinless chicken breasts, 1 eight ounce carton of whipped cream cheese with onion and chives, divided, margarine and 6 bacon strips.
Flatten chicken to 1/2-inch thickness. Spread 3 tablespoons of cream cheese over each. Dot with margarine and a little salt. Roll up. Wrap each with a bacon strip. Place seam side down in a greased 9 x 13-inch baking dish. Bake, uncovered, at 375 for 40 to 45 minutes or until juices run clear. To brown, broil 6 inches from heat for about 3 minutes or until bacon is crisp.

Here are a couple of beef dishes and a nice potato side dish. First I'll start with ROASTED GARLIC STEAK. You need 2 fifteen ounce cans tomato with roasted garlic and herb soup, 1/2 cup Italian salad dressing, 1/3 cup water and 1 1/2 pounds (3/4-inch) boneless beef sirloin steak.
In a saucepan, combine soups, dressing and water. Broil steaks to desired doneness; allow 15 minutes for medium. Turn once and brush often with the sauce. Heat remaining sauce to serve with steak.

I think I'm going to try this one next! To make MUSHROOM ROUND STEAK you need 2 pounds (3/4-inch thick) round steak, 1 package dry onion soup mix, 1 cup dry red wine and 1 four ounce can sliced mushrooms.
Remove all fat from steak and cut in serving size pieces. Brown meat in skillet with a little oil on both sides. Place steak in a buttered 9 x 13-inch casserole dish. In a frying pan, combine the onion soup mix, 1 cup of hot water, wine and mushrooms. Pour over browned steak. Cover and bake for 1 hour and 20 minutes or until steak is tender.

This side dish would go well with either of the beef dishes. You can't go wrong with something like VEGETABLE STUFFED POTATOES. You need 2 ten ounce cans fiesta nacho cheese soup, 1 sixteen ounce bag frozen assorted vegetables, 8 large potatoes and black pepper.
In a saucepan, heat nacho cheese and vegetables. Cut a length-wise slice in the top of each potato. Slightly mash the pulp in each potato. Spoon sauce mixture onto each potato, and sprinkle with black pepper.

For anyone throwing a party, or going to one, here are a couple of interesting beverages to have/bring, just as something different. First is PINA COLADA PUNCH. To make you need 1 forty-six ounce can pineapple juice, chilled, 1 twenty ounce can crushed pineapple, undrained, 1 fifteen ounce can cream of coconut and 1 thirty-two ounce bottle 7-Up, chilled.
Combine all ingredients. Serve over ice cubes.

I think this one sounds good for a mildly alcholic drink. It's SPARKLING PUNCH. Make with 6 oranges, unpeeled, thinly sliced, 1 cup of sugar, 2 (750 ml) bottles dry white wine and 3 (750 ml) bottles sparkling wine, chilled.
Place orange slices in a large plastic or glass container and sprinkle with sugar. Add white wine. Cover and chill at least 8 hours. Stir in sparkling wine.

This last one is for Anthony. KAHLUA FROSTY! To create this drink, you need I cup Kahlua, 1 pint vanilla ice cream, 1 cup of half and half and 1/4 teaspoon almond extract
In a blender, combine all ingredients and one heaping cup of ice cubes. Blend until smooth. Serve immediately.

I don't know about you, but I love crackers, especially with a nice pate, or cheese spread. My favorite things to have with crackers actually are cheese balls, so I'm giving the recipe today for CHILI CHEESE BALLS. You need 1 eight ounce package of grated sharp cheddar cheese, softened, 1 stick margarine, softened, 1 cup flour, and 1 four ounce can chopped green chilies, drained.
Stir cheese and margarine together. Add flour, green chilies and 1/2 teaspoon salt. Form dough into 2 inch balls and place on cookie sheet. Bake at 375 for 14 t o 15 minutes.

There's also the RANCH CHEESE BALL. To make this, you need 1 package dry ranch style salad dressing mix, 2 eight ounce packages of cream cheese,1/4 cup finely chopped pecans, and 1 three ounce jar of real bacon bits
With mixer, stir together the dressing mix and cream cheese. Roll into a ball. Roll cheese ball in the bacon bits. Refrigerate several hours before serving.

Chicken Curry Soup

4 cans chicken broth (use slightly less water than broth  -> 3 cans)
chicken, diced
onion
celery
carrots
potato
2 envelopes of curry paste: Indian Chicken Curry (you can get this in the
International food section of Superstore - the envelope is purple and is
usually mixed with the Indian Meat  Curry packets)
1 can coconut milk
1 cup cream (optional)
salt & pepper to tast

1.) Heat broth and water on medium-high heat until steaming.
2.) Add chicken and simmer.
3.) Just before chicken is cooked, add carrots, celery, onion, potato and
curry paste.
4.) Simmer for 10-15 minutes.
5.) Add coconut milk and cream. Simmer for 5-10 minutes.
6.) Add salt & pepper to taste.
7.) Serve & enjoy!
